Chef Nina Compton to Host an Inspired Pop-Up Benefit Dinner at the Skylark

Celebrated St. Lucian star chef to prepare an inventive jerk-themed menu alongside acclaimed Kingston-born Chef Andre Fowles at the recently-opened beachfront hotel

Directly on the heels of her historic James Beard award for Best Chef: South,  Caribbean-native Chef Nina Compton will host an intimate pop-up dinner event at Skylark Negril Beach Resort, the new sister property behind Jamaica’s legendary clifftop Rockhouse Hotel. The one-night only culinary event will take place on the new hotel’s open air-deck overlooking Seven Mile Beach on Saturday, July 28th, at 7pm.

All ticket proceeds will benefit Rockhouse Foundation, the charitable arm of Skylark and Rockhouse Hotel, which transforms the places where Jamaica’s children learn and supports the people who teach them. Over the past decade, the Foundation has invested over US$4 million in projects improving education for the children in Western Jamaica.

The five-course jerk-themed menu will be served family style, and will showcase the diversity of Jamaica’s signature ingredient. Menu highlights will include inventive preparations of local beef and seafood, house-made pasta, and fresh produce sourced from Rockhouse’s organic garden, all prepared with the beloved spice blend.

Compton has shaken the culinary world this year, earning accolades for her unique Caribbean-inspired Louisiana cuisine. Her participation in this special pop-up event has her returning to Jamaica, the beloved island she fell in love with while working in a hotel kitchen when she was in her 20’s.

Jamaica’s own Chef Andre Fowles will be supporting Compton in the kitchen on this special evening. The Kingston-born Food Network Chopped “Champion” and New York City-based chef is helping to lead culinary development at the Skylark’s new restaurant – Miss Lily’s – slated to debut in September.

The dinner, priced at $200 per person inclusive of beverage, tax and gratuity, is open to both hotel and non-hotel guests. Reservations must be made in advance, and space is limited to 40 people. For more information and reservations, please email bookings@skylarknegril.com.

Serge Becker’s Miss Lily’s Is Going Home to Jamaica

Vacation like Meghan Markle and Bella Hadid in Jamaica’s newest hot spot, the Skylark hotel.

New York’s beloved Miss Lily’s, the Caribbean rum bar and restaurant that has brought dreams of eternal summer to its two Manhattan locations since 2011, is going back to its roots. A Miss Lily’s location will open this summer at the brand-new Skylark Negril Beach Resort, bringing an authentic and mouthwatering taste of island life to Negril’s picture-perfect Seven Mile Beach.

“We’re extremely excited to be bringing Miss Lily’s home!” says Skylark chairman and Miss Lily’s partner Paul Salmon, who teamed up with the restaurant’s creative director Serge Becker for the project. (Becker is the nightlife tycoon behind equally popular New York hot spots La Esquina, the Box, Lure Fishbar, and Café Select.)

“Jamaica’s culture, the place and its people, have been a constant inspiration to me, and to do Miss Lily’s at Skylark is the natural fit,” Becker said. “The sunny décor of the original location was modeled after the restaurants, fast-food joints, hair salons, record shops, and bakeries that serve the Jamaican diaspora in Brooklyn and N.Y.C.’s outer boroughs. For the new Negril location, we’ll also be looking to the vibrancy of the local designs and iconography.”

Skylark is the second of Salmon’s Jamaican resorts, getting its name from Jamaican slang involving shenanigans and tomfoolery. Set on 220 feet of idyllic beach, the new property is taking bookings as of April 1, during its soft opening, with the official opening following June 1. Skylark is just five miles down the road from its boutique sister hotel, Rockhouse, famous for its stunning cliffside setting. Rockhouse has gathered quite the celebrity following, appearing on the Instagram feeds of Bella HadidHailey Baldwin, and Rita Ora. Even Meghan Markle gives it the royal seal of approval. What’s more, the hotels support the Rockhouse Foundation, dedicated to the improvement of education for the children of Negril. Be right back—we’re grabbing our passports.

Swimming, snorkeling and paddle boarding in the crystal clear waters of Negril beach are amongst the most popular pastimes at Skylark. Take a short boat trip out to the reef, into the snorkel-perfect water where there are abundant clusters of dwarf tube sponges, vibrant coral heads and a variety of colorful reef fish.

At Skylark we are curating a vast assortment of activities. Our weekly scheduled classes include cooking, painting, meditative tours, daily yoga practice at the Rockhouse, and our Rockhouse Foundation Community tour. Also available at our cliff-side sister property are Caribbean dance and interval training at the fitness center. For activities at Rockhouse, our complimentary shuttle will transport you. In addition we encourage guests to enjoy the many cultural treasures of Jamaica and offer a full menu of suggested off-premise excursions including cascading natural waterfalls and mineral baths; jungle canopy zip-lining; and many other fun day-trips ranging from exhilarating to educational and, more often than not, both.
